At the beginning of March we served a Pineapple Coconut Slaw at our salad bar. We saw some requests for this recipe on facebook and decided it was time to share this one. Enjoy!!!
Pineapple Coconut Slaw
20 oz. can pineapple chunks
Drain pineapple juice and save for the dressing.

DRESSING:
1 ¾ cup salad dressing (Available at your grocery store – try Best Foods or Hellmann) *Don’t use mayo or miracle whip
1 ½ tbsp. pineapple juice (from pineapple chunks)
2 ½ tsp. white sugar
In a mixing bowl, combine the salad dressing, pineapple juice and white sugar. Thoroughly whisk to combine.

16 c. of sliced green cabbage
2 ¼ c. shredded coconut
Pineapple chunks
Dressing
Slice the green cabbage into small pieces. In a large mixing bowl, combine the green cabbage, coconut, pineapple chunks and dressing. Thoroughly mix until all cabbage is coated with dressing. Allow to chill in refrigerator for the best flavor.
I just want to clarify that this recipe is saying to use “16 cups” of sliced green cabbage. Am I reading that right?
Correct, 16 cups of green cabbage, slice the green cabbage into pieces that are ¼” wide x 3” long. The recipe yields 8-9 cups.

I am a bit confused by this recipe….i had thought that the designation for ‘salad dressing’ was miracle whip….what is it then?
Faleen- look for lables that specifically say “salad dressing”. It’s usually in the same area as the may and miracle whip. I use a brand called Spin Blend. Hope this helps.

I was down in Florida this past week, and went to Sweet Tomatoes twice with my daughter who lives down there. (Unfortunately, there aren’t any Sweet Tomatoes up here in New York -Long Island, and I make it a point to get there at least once during my visits with my daughter.) I love the whole fresh salad bar, strawberry lemonade, healthy wheat bread with all those seeds!) I tried the pineapple slaw the first day, and insisted we return the second time that week so I could have some more!
Just noticed the recipe. Is the ‘2 ¼ c. shredded coconut’ fresh coconut or sweetened dried coconut?
We had this for Easter dinner yesterday and it was just as yummy as it was in the restaurant. My son named the dish “Pinacoleslawda.”

Best Foods’ website does not include salad dressing among its products. Maybe it’s marketed to restaurants, etc.
Is this the same salad dressing recipe to be used to make the Island Hawaiian Crunch salad?

I began a search to find a recipe similar as soon as I was on a PC. It’s an enhancing cool summertime side dish.
I had this salad at Sweet Tomato and loved it. I looked up the receipt and found it on Sweet Tomato. However, I’m confused. It calls for shredded cabbage 16 c. Do they mean cups or ounces. The supermarket sells cole slaw but it is 16 oz. Please clarify.

Hi Patricia – they are all slightly different products with slightly different tastes. So using mayo or miracle whip in this recipe won’t make it taste how it should!
I’m confused by the salad dressing instructions. When I hear the term ‘salad dressing,’ different types come to mind. There’s, Italian, Caesar, blue cheese etc. Are they referring to an actual type of salad dressing? Can someone specify. Bc it says to use Hellmans, but not mayo. But Hellmans is s brand of mayo. What exactly am I supposed to use. Hellmans mayo? Or a specific type of salad dressing.
Hi Cecilia – “Salad Dressing” is actually a different product made by Hellmans. It is sometimes harder to find in different regions. Good luck!
I am finding Hellman’s salad cream. Is it the same as the Hellman’s salad dressing?
