DECEMBER RECIPE

Some people associate turkey with Thanksgiving, but incorporating turkey into your meals all year round is not only delicious, but adds a healthy protein to your diet.

During December, we are serving the Creamy Herbed Turkey Soup all month long, as if you weren’t sick of turkey from Thanksgiving already, we gave you a few new ways to enjoy turkey – in your soup and  your salad with our Smoked Turkey Spinach Salad. It’s like sitting down to a holiday dinner! Tender pieces of turkey, tart dried cranberries and spices compbine to create the flavor of this festive soup!

Creamy Herbed Turkey

1 lb. turkey breast meat

Cook turkey in an oven. Slice into bite size pieces.  You will  add it to the finished soup.

1 ½ cups ¼” diced carrot

1 ½ cups ¼” diced celery

8 cups water

Heat water to a boil. Cook the carrots and celery for 8 minutes until soft. Strain and cool in cold water. You will add these to the finished soup.

½ lb. butter or margarine

2 Tablespoons minced garlic

2 cups ¼” diced yellow onion

1 cup ¼” diced celery

1 cup ¼” diced carrot

In a pot, melt the butter. Add the garlic, onion, carrot & celery. Sauté for 5 minutes.

1 ½ cups white flour

Stir in flour and continue to cook for 5 minutes on low-medium heat.

8 cups water

5 Tablespoons turkey base

Add the water and turkey base. Blend with a hand held mixer until smooth.

6 cups water

1 ½ tsp. kosher salt

1 ¼ tsp. ground black pepper

1 tsp. dried sage

1 tsp. dried marjoram

½ tsp. dried rosemary

½ tsp. dried thyme

Add water, herbs and spices. Heat to 190 degrees or a low simmer. Cook for 10 minutes on medium heat until thickened.

2 cups heavy cream

½ cup chopped Italian parsley

1/3 cup diced dried cranberries (Craisins)

Cooked carrots and celery

Cooked & sliced turkey breast meat

Add cream, parsley, turkey meat, cranberries, cooked carrots and celery. Stir to combine. Cook on medium heat for 2 minutes. Yields 5 quarts.

At Souplantation/ Sweet Tomatoes, we serve ours with stuffing, that is optional at your house.

  1. This was delish! I had it twice this mo. I also LOVED the smoked turkey/spinach & almond salad (the apples were so crisp). I would really like to know what the dressing was? My hubby said it was a basalmic and I say honey mustard type.

  2. I was a first time visitor of your resturant while on my vacation to Florida. Let me be honest I was very leary going, not at all a buffet girl, WOW was I in for a huge surprise! What a fabulous meal. All the different salads, soups – I was totally impressed! Even my children had a great time and loved all the variety especially the dessert bar. Can’t wait to go back next time we’re in Florida. PLEASE bring one to Harrisburg, PA we SO need a good place to eat.

  3. I’m a little confused regarding the Creamy Herbed Turkey Soup recipe from your December recipe blog. What is Turkey Base? And do you add the 8cups of water and turkey base to the sauted onion, garlic, etc.?

  4. OMG!!! I had this soup the other day and haven’t stopped thinking about it. It is so delicious and I could eat it every day!! The spices and just the taste of it warms my heart and with a bowl and a half I was so full I didn’t eat that night. Thank you so very much for such a delicious soup and that you also for having the recipe on line, because I will be making it for me and my family and know they will enjoy it as much as I did!!!   5. This was the first soup I tried at soup plantation. It was so good I didn’t want to try anything else. Thanks for posting this recipe online. I didn’t have turkey base but used turkey gravy instead. Worked really well. Then served it with cornbread stuffing. Perfect for a rainy day!

  6. We had this last weekend & loved it. It’s one of my favorites from Sweet Tomatoes. Since I had leftover turkey breast in my fridge from the night before and googled while we were eating at the restaurant to see if anyone had hacked the recipe. Imagine my surprise to find it on your blog.

    I already had everything in the recipe on hand except for the parsley and an extra couple of carrots so grabbed those the next day to test it. The recipe is fantastic!!! My only changes were that I used chicken base since I already had it on hand. I’ll try it with the turkey base next time but either way this is a keeper. We also had a Whole Foods Cranberry & Chicken Stuffing in the pantry. It was the perfect complement to this amazing soup.

    I found it easy to prepare even with a toddler running around, fast to get on the table, and toddler approved in the tasting department.

    PS: This is a huge recipe. We had leftovers the next night (for 2.5 people) and have 2 more dinners frozen for later in the next month. So thanks again for also helping me have dinner already prepared later in the month!
