Mandarin Spinach Salad with Caramelized Walnuts Recipe

Spring is here and the sunnier weather has us thinking of backyard BBQs and block parties. If you’re looking for a light and tasty side dish to bring to any upcoming outdoor celebrations or you want to start your family dinner with a refreshing salad, try dishing up this Mandarin Spinach Salad with Caramelized Walnuts. Mandarin Spinach Salad with Caramelized Walnuts

Vegan, Gluten Free


For the walnuts:

Water 2 cups
Diced walnut pieces 1 cup
White sugar 3 tbsp

For the dressing:

Canola oil 2 cups
Fresh orange juice 1 1/4 cups
White sugar 1 cup
Fresh lemon juice 6 tbsp
White wine vinegar 4 tbsp
Spanish paprika 1 tbsp
Table salt 1 tbsp

For the salad:

Chopped spinach 8 cups
Mandarin orange 1 1/2 cups
Diced red onions 1/4 cup


Caramelize the walnuts:

  1. Bring water to a boil.
  2. Add walnuts, cook for 40 seconds then strain out water.
  3. Combine walnuts and sugar in a bowl, stir to coat.
  4. Place sugar covered walnuts on a sheet pan and bake at 325°F for approximately 8 – 10 minutes or until golden brown.
  5. Set aside to cool.

Mix the dressing:

  1. Combine all ingredients and whisk until the sugar is dissolved, set aside.

Prepare the salad:

  1. Toss spinach, Mandarin oranges, diced onions and caramelized walnuts together.
  2. Dress salad according to taste.

    I just found out my all time favorite grilled cheese dippers were available this month. I went to the store but they said they were out of stock and it finished early. Is there any other month you will have it available again? 🙁 this year?

  2. Looks like this is the only way to give feedback, so…
    I got this birthday coupon in my email box today. 20% off, which is great.
    What is not great is that whenever you send coupons via email, it takes TWO pages to print them. There’s no way for me to tell whether or not there will be two pages, nor what will print on each page, so I print all, and get one page with the coupon on it, and one page that has to be recycled.
    Perhaps you could put the coupon at the top, or make the greeting a lot smaller so that everything fits on one printer page.
