WE LOVE SPUDS!
In celebration of all the delicious potato dishes on the menu this month, including Irish Potato Leek Soup, Broccoli Cheese Baked Potato Poppers, Bistro Potato Salad, Potato, Tomato & Spinach Soup and more, we asked the United States Potato Board (USPB) to tell us what it is that makes potatoes so wonderful and nutritious.
As the USPB explains, although there is no cure for the flu or common cold, there are positive links between strong immune systems and healthy eating. Potatoes are a good choice this winter because they are packed with both vitamin C (more than half your daily value) and potassium (more than a banana!). And, a medium-size potato (5.3 ounces) has no fat, sodium or cholesterol – all for just 110 calories!
More good news: the USPB recently launched a “Twice Baked, Twice as Smart” Facebook recipe photo contest on their Facebook page, Potatoes, Taters & Spuds. Simply snap a photo of your best, original, creative, and most mouth-watering Twice Baked potato recipe and submit it along with a creative caption for a chance to win a $500 VISA gift card!
