SEVEN TYPES OF POTATOES
Did you know that it’s potato menu month at Sweet Tomatoes and Souplantation restaurants? One of the delicious potato dishes we will be serving this month is a Roasted Potato Salad with Chipotle Chile Vinaigrette made with red potatoes, one of the seven unique potato types – that’s right one for everyday of the week!
If you didn’t know there were seven unique potato types, look no further than the United States Potato Board (USPB) for more information about all seven – Russets, reds, yellows, whites, fingerlings, petites and purples/blues. For example, red potatoes like the ones in our Roasted Potato Salad have a firm, smooth and moist texture, they are perfect for salads like this one, as well as for roasting, boiling or steaming. What else is great about this vegetable?
- Potatoes are packed with potassium. In fact, new research shows that potatoes are the most affordable and largest source of potassium in the produce department – that means they have more potassium than a banana!
- Potatoes also provide nearly half the daily value of vitamin C (45 percent)
- A medium-size potato (5.3 ounces) has no fat, sodium or cholesterol – all for just 110 calories!
